This Week In Our Kitchen: November 6th

We just wrapped up our last week of football practices, which should put our household back to some sort of normalcy. I hope! I do know it should make it easier to get food on the table. We are also in the process of wrapping up our last week of school before the holidays, which will give us time for cooking and making memories.

Due to the house still recovering from the week before we ate a lot of sandwiches and soup, so I didn’t cook a majority of what I had planned. My husband did make his famous ghoulash this week and he makes so much it is a great asset because there are so many leftovers. One of these days I need to write down what he does, but honestly he is always changing things up. Needless to say, the ghoulash was his favorite dinner, lunch, breakfast of the week.

Here is what we will be eating at our house this week.

Sunday: Chicken Parisian, Ceaser Salad and Crusty French Bread

Monday: Slow Cooked French Dip Rolls and oven fries

Tuesday: Sausage and Black Bean Soup with Cheese Quesadillas

Wednesday: Kitchen and Kids Meatloaf, Parmesan Roasted Potatoes and a vegetable yet to be determined.

Thursday: Texas Two Step Pork Chops, Dill Potato Salad and Chipotle Corn on the Cob (I will be adding the Texas Two Step Pork Chops to my blog later this week.)

Friday: TBD (maybe homemade buffalo wings and french fries)

Saturday: Fish and Chips

Wordless Wednesday – Her Own Style

She has distinct ideas about her own style. She loves to wear her brother’s sweatshirts, as in this picture. And, she also likes to wear nothing but a diaper other times. Thank goodness she lets me dress her for church, and she stays that way minus her shoes and possibly her hair bow. All I can say is she keeps me laughing day in and day out. I can’t wait to see what her baby brother will be like.

This Week In Our Kitchen: Week of October 30th

This last week I had a houseful of sick kiddos, and unfortunately the sickness still prevails, so I am not sure how much will actually be eaten this week. I think I only made one thing from my menu last week because my precious toddler wanted her Mama to sit and hold her, so instead of cooking we had movie days.

It was a bit rainy and cool this week, so the one thing I did make was a homemade beef stew with beer bread. It really hit the spot and has been wonderful through this week of sickness.

Here is what we will be eating at our house this week.

Sunday: Monte Cristo Sandwiches, Creamy Tomato Soup and Pasta Salad

Monday: Kitchen and Kid’s Ghoulash

Tuesday: Cheesy Lasagna, Roasted Brussels Sprouts, and Garlic Bread

Wednesday: Chicken Parisian, Ceaser Salad and Crusty French Bread

This Week In Our Kitchen: October 23rd

This week has been a great week! We heard the baby’s heart beat and we got to find out if it is a boy or a girl. Now I know why I crave the things I do,  because it is …

Earlier this week I participated in a cooking challenge by The Lady Behind The Curtain, and it was fun. We had to come up with a recipe using caramel and apple, which for me was àpropos as that is my pregnancy craving. Not only did I come up with one recipe, but more like four or five. I plan on posting those in the next week if time allows. So far you can check out my Caramel Apple Salad and Baked Caramel Apple Oatmeal. They are both quite yummy.

This week my husband’s favorite dinner was the Shredded Beef Tacos, which I snagged from a commenter on This Week For Dinner. He loves any kind of taco because it is so easy for him to make a quick bite to eat. Another thing we liked was Chicken and Artichoke Stuffed Shells, both of my kids loved them. Now I must say I did not follow the recipe to a T because I was just in a hurry and didn’t read it completely, but it was very good. The kids have been eating the leftovers, which to me is quite surprising.

Here is what we will be eating at our house this week.

Sunday: Chicken Fried Rice

Monday: Grandma’s Meatloaf, Garlic Scalloped Potatoes, and Brussels Sprouts

Tuesday: Chicken Parisian, Ceaser Salad and Crusty French Bread

Wednesday: Beef and Cheese Enchiladas ( This link is for only cheese enchiladas, but I am going to make beef and cheese using parts of this recipe. I’ll let you know the final product.)

Thursday: Beef Stew and Homemade Bread

Friday: Leftovers

Saturday: Fish and Chips

Baked Caramel Apple Oatmeal

Fall is in the air and nothing sounds more comforting and good for you than hot oatmeal. Well besides caramel apples. So in an effort to combine two classic fall foods together I revamped an old recipe and added some new ingredients to make it Baked Caramel Apple Oatmeal. Del.icio.us!

Baked Caramel Apple Oatmeal

1  1/2 cups quick cooking oats
1/4 cup packed brown sugar
1/4 cup sugar
1 tsp baking powder
3/4 tsp salt
1 tsp pure vanilla
1 tsp cinnamon
3/4 cup milk
1/4 cup melted butter
1/4 cup caramel topping
1/2 cup peanut butter
1 apple, cored and diced (I prefer pink lady or gala and I leave the skin on it for prettiness.)

1.) Pre-heat oven to 350, and lightly butter a 8 x 8 square pan.

2.) Wash, core and dice apples.

3.) Mix in the oats, brown sugar, sugar, salt, baking powder and cinnamon until thoroughly combined.

4.) Add in the vanilla, egg, butter, milk, peanut butter and caramel sauce stir until well mixed.

  

5.) Fold in the apples.

6.) Pour into buttered dish.

7.) Bake at 350 degrees for 30 to 4o minutes, until it is not runny.

Serve warm with a splash of milk. We like to top ours with either raisins or craisins. It makes a wonderful fall breakfast.

Caramel Apple Salad – My Craving

So what kind of foods do you crave?

Well, in pregnancy #3 I crave caramel apples, so I have been experimenting with different caramel apple recipes. My main goal is to keep the apples fresh tasting. I don’t want them overcooked, I don’t mind cooked, just not overcooked. My husband wants  a caramel apple pie which sounds so good, but this little baby does not want pie. He wants salad, so there you have it – caramel apple salad. I also made baked apples, which I will add at a later date. I also am going to make a caramel apple crumble to appease my husband’s desire. I am thinking about experimenting with caramel apple muffins; if those turn out I will add those, too. As you can see I am excited about caramel apples, and I hope you are too. You can view the recipe below and then after that you will have the opportunity to check out several other caramel apple recipes from other bloggers.

Caramel Apple Salad

As I always say, gather all of your ingredients before you beginning.

4 large apples, I prefer Gala or Pink Lady apples
8 oz fat-free cool whip
8 oz pineapple tidbits
2 – (1 oz.) boxes instant Sugar Free Butterscotch Pudding
1 jar of caramel ice cream topping

1) Core and dice the apples, do not peel.

 

2) Mix in pineapple tidbits with juice.

 

3.) Add in cool whip, mix well.

4) Thoroughly mix in the butterscotch pudding.

5.) Refrigerate for a minimum of one hour.

6.) Drizzle the caramel topping over the salad before serving.

As a home school mom I get the opportunity to see my son work on assignments, do projects and attempt experiments. I try to take a moment, grab a camera and document some of these projects. I know he enjoys the hands-on and I know he is learning quite a bit.

This Week In Our Kitchen: October 16th

This week my husband’s favorite dinner was the Beer Marinated Chicken Tacos, Corn and Black Bean Salad, Guacamole and homemade corn tortillas. He is also enjoyed the spaghetti and meat sauce. However, my favorite dinner was the Beef and Black Bean Chili and the StoneGable Sweet Buttermilk Cornbread. (I will post the recipe for the chili later this week.)

Here is what we will be eating at our house this week.

Sunday: Fend for yourself night. I went to the theater, so I figured I didn’t want to worry about it. There is plenty of food in the fridge and everyone except Little Miss can make something. Little Miss can just speak her mind and someone will feed her.

Monday: Grilled ham and cheese sandwiches and homemade creamy tomato soup

Tuesday: Parmesan Ranch Baked Chicken, Rice Pilaf and Brussels Sprouts

Wednesday: Shredded Beef Tacos ( I snagged this recipe from a commenter on This Week For Dinner.)
