Earlier this week I participated in a cooking challenge by The Lady Behind The Curtain, and it was fun. We had to come up with a recipe using caramel and apple, which for me was àpropos as that is my pregnancy craving. Not only did I come up with one recipe, but more like four or five. I plan on posting those in the next week if time allows. So far you can check out my Caramel Apple Salad and Baked Caramel Apple Oatmeal. They are both quite yummy.
This week my husband’s favorite dinner was the Shredded Beef Tacos, which I snagged from a commenter on This Week For Dinner. He loves any kind of taco because it is so easy for him to make a quick bite to eat. Another thing we liked was Chicken and Artichoke Stuffed Shells, both of my kids loved them. Now I must say I did not follow the recipe to a T because I was just in a hurry and didn’t read it completely, but it was very good. The kids have been eating the leftovers, which to me is quite surprising.
Here is what we will be eating at our house this week.
Sunday: Chicken Fried Rice
Monday: Grandma’s Meatloaf, Garlic Scalloped Potatoes, and Brussels Sprouts
Tuesday: Chicken Parisian, Ceaser Salad and Crusty French Bread
Wednesday: Beef and Cheese Enchiladas ( This link is for only cheese enchiladas, but I am going to make beef and cheese using parts of this recipe. I’ll let you know the final product.)
Thursday: Beef Stew and Homemade Bread
Friday: Leftovers
Saturday: Fish and Chips

It all has to do with grocery shopping. If I actually make it to the store and pick up the ingredients at the beginning of the week, then I am sure to make most of the foods on the list. If I haven’t picked up the ingredients it might take me a few weeks to actually to get to the menu item.
